Nine knife sharpening mistakes
Almost every 'I sharpened it and it is still dull' story comes down to one of nine things. Here they are, with the fix for each — and the two that permanently damage a knife.

Sharpening is not difficult, but it is unforgiving of a small number of specific errors, and almost every "I spent an hour on the stone and it is still dull" story traces back to one of them. Most are recoverable in a single session once you know what went wrong. Two of them — the ones marked below — do permanent damage, and those are the ones worth reading even if you never pick up a stone.

1. Not holding a consistent angle
The most common failure by a wide margin. If the angle wanders, you round the bevel instead of grinding a flat facet to an apex, and a rounded bevel never gets sharp no matter how long you work. Fix:color the bevel with a permanent marker and take one stroke. If ink is removed from the whole bevel, your angle is right; if only the shoulder or only the apex is clean, adjust. 2. Using the wrong angle for the knife
Grinding a 15-degree Japanese edge at 20 degrees thickens it permanently and throws away the geometry you paid for. Doing the reverse on a soft German knife leaves an edge too thin to survive. Fix:find out what your knife is ground at — most makers publish it — and match it. Detail in knife sharpening angles.
3. Too much pressure
Pressing hard feels productive and is counterproductive: it gouges the stone, dishes it faster, generates heat, and creates an oversized burr that is harder to remove than the one you wanted. Fix: the weight of the knife plus light finger pressure on the blade. Let the abrasive cut. If nothing is happening, the answer is a coarser stone, not more force.
4. Never raising a burr
If you stop before a burr forms along the whole length, you have not reached the apex on that side, and the two bevels never meet. This is why knives come off the stone feeling slightly better and still failing the paper test. Fix: work one side until you can feel a consistent burr with a fingertip drawn away from the edge along its entire length, then switch sides. No burr means keep going.
5. Skipping the deburr
A burr feels sharp and is not. Left in place it folds on the first hard cut and the edge is dull within minutes — the classic "it was sharp for one meal" complaint. Fix: alternate very light passes on your finest stone, then strop. Full method in sharpening vs stropping.
6. Working on a dished stone
Water stones wear in the middle. A concave stone cannot produce a flat bevel — the middle of the blade gets ground while the ends do not touch, and you chase a sharp edge you cannot reach. 7. Starting too fine (or too coarse)
Trying to bring a genuinely dull knife back on a 6000-grit finishing stone takes hours and usually fails. Reaching for a coarse stone to touch up an edge that only needed honing throws away steel for nothing. Fix:match grit to condition — coarse for damage and reprofiling, medium for a dull-but-undamaged edge, fine for refinement. Whetstone grits explained sets out the progression.
8. Running a serrated or single-bevel knife through a pull-through — permanent
A pull-through sharpener grinds the tops off serrations and turns them into a ragged straight edge, and it regrinds a single-bevel Japanese knife into a symmetrical one. Both are irreversible. 9. Overheating the edge on a powered grinder — permanent
A bench grinder or belt sander run dry will take the temper out of the very edge of the blade in seconds. The steel changes color — straw, then blue — and once that happens the edge is permanently soft and will never hold sharpness again, no matter how well you sharpen it afterwards. Fix: do not use a high-speed dry grinder on kitchen knives. Purpose-built electric sharpeners run slowly enough to be safe; angle grinders and bench grinders are not.
The two habits that prevent most of these
First, test as you go rather than at the end — a paper slice after each stage tells you which step failed instead of leaving you guessing. Second, hone weekly so that sharpening is a rare, deliberate session rather than a rescue mission on a knife you have let go completely.
