Most fifteen-piece blocks are mostly filler

Count how many knives you actually reach for in a week. For most people it is three: a chef's knife for nearly everything, a paring knife for small work, and a serrated knife for bread and tomatoes. A big block pads the count with steak knives, a boning knife, shears and slots you may open twice a year. That padding is not free - it comes out of the per-blade quality budget, which is why a focused set often out-cuts a bigger one at the same price.

The three knives that actually earn a slot

If you buy nothing else, buy those three well. A quality 8-inch chef's knife handles the large majority of kitchen tasks; pair it with a decent paring knife and a serrated blade and you have covered most of what a full block does. Forged, stamped, and the block sharpener catch

Forged blades are heavier and hold an edge longer; stamped blades are lighter and cheaper. Neither is wrong - match it to your hands. One caution: a block with a built-in pull-through sharpener is convenient, but it removes metal every time and is no substitute for honing. Learn the difference in sharpening vs honing before you lean on one.

Everyone in this category says they tested twenty knives in a professional kitchen. We have not hands-on tested any of these, and we say so. What we did instead: compiled the published specifications — steel type and hardness (HRC), edge angle, blade geometry, weight and build — applied established sharpening standards, ran the value math (spec quality ÷ live price), and scored each product against a published rubric. The scores are judgments from documented research — not measurements we took, because we do not have a test lab and we will not pretend we do. Are fifteen-piece knife sets worth it?
Only if you will use most of the pieces. For many cooks a big block is mostly filler, and the money would buy better blades in a smaller set. Count how many knives you reach for in a normal week before you decide.
What knives do I actually need?

Is a forged set better than a stamped set?
