How to flatten a whetstone
Water stones wear in the middle, and a hollow stone quietly makes sharpening impossible. Three ways to bring one back flat, and the pencil-grid trick that shows you when to bother.

Whetstones wear where you use them, which is the middle. Within a few sessions the surface is very slightly concave; within a few dozen it can be visibly hollow. A dished stone cannot produce a flat bevel, because the center of the blade contacts the low point while the heel and tip ride on the raised ends. You get a rounded, uneven edge and no amount of patience fixes it — this is mistake number six in our sharpening mistakes guide and it is the one people are least likely to suspect.
Diamond plates do not have this problem: they are a rigid substrate and stay flat for life, which is a genuine part of their appeal — see best diamond sharpening stones. Everything below applies to water stones, oil stones and combination stones.
The pencil grid test
Draw a grid of pencil lines across the whole face of the dry stone — four or five lines each way is plenty. Wet the stone and rub it a few times against your flattening surface. Wherever the pencil disappears, the stone is high; wherever the lines remain, it is low. When every line is gone the stone is flat. It takes ten seconds, it costs nothing, and it turns flattening from guesswork into something you can see.
Method 1: a coarse diamond plate
The fastest and most controllable option, and the reason many people own a coarse diamond plate even if they sharpen on water stones. Soak the stone as normal, draw the pencil grid, then work the stone face-down on the plate under running water or with frequent rinsing, moving in circles and figure-eights so you do not wear a new hollow. Keep both surfaces wet: the slurry is abrasive and needs flushing away, and a dry plate loads up quickly. Two minutes for a normally dished stone.
Method 2: a dedicated lapping plate
Purpose-made flattening stones and lapping plates are usually grooved to clear slurry and are sized to match a standard stone. They cut a little more slowly than diamond and are cheaper, and the grooves genuinely help — slurry trapped between two flat faces is what makes flattening feel like hard work. The same technique applies: wet, circles and figure-eights, rinse often, check the pencil grid.
Method 3: wet-and-dry paper on glass or granite
The cheap answer, and it works well. Tape a sheet of coarse silicon-carbide wet-and-dry paper — around 120 to 220 grit — to a genuinely flat rigid surface: a thick glass panel, a granite offcut, or a machinist's surface plate if you happen to have one. A kitchen worktop is not flat enough. Keep everything wet, work the stone in circles, and replace the paper when it stops cutting. The paper does wear out quickly, which is the trade for the low cost.
Two things that do not work
Rubbing two stones together sounds appealing and is not reliable: both are dished, both are worn differently, and you end up with two matched curves rather than two flat faces. And concrete paving slabs, a piece of advice that circulates constantly, are neither flat nor consistent, and the grit they shed contaminates the stone. Use a reference surface that is actually flat.
How often
More often than most people do. Serious sharpeners flatten before every session, which sounds excessive and takes under a minute once the stone is nearly flat — the work scales with how far gone it is, so frequent flattening is quick and infrequent flattening is a chore. A reasonable home rule is every three to five sessions, plus any time the pencil grid shows an uneven surface, plus always after a heavy reprofiling job which dishes a stone quickly. Softer, faster-cutting stones dish faster than hard ones.
Chamfer the edges while you are there
The sharp corners of a stone chip easily and a chipped corner can catch a blade. Once the face is flat, run the flattening plate lightly along each long edge at about 45 degrees to knock a small chamfer onto it. Ten seconds, and it stops the stone shedding corners into your slurry for the rest of its life.
Drying and storing
Let a soaked stone dry fully before putting it away in an enclosed box, or it will grow mold and can develop an odor that never quite leaves. Never store a soaking-wet stone somewhere it can freeze — water trapped in the pores expands and cracks the stone. Splash-and-go stones need only a quick rinse and a wipe.
