What a guided system actually fixes
Every sharpening method removes steel until two bevels meet in a line. The only thing that separates a keen edge from a rounded one is whether you held the same angle on every stroke. Most guided systems were designed around pocket and hunting knives, and it shows. A tall 8-inch chef's knife blade is wider than many clamps like, which can mean re-clamping partway along the blade and a visible transition where the two setups met. Guided system, whetstone, or electric?
