Five criteria, applied in this order. Edge quality— what the machine can actually produce, which comes down to abrasive material and whether there is a fine or stropping stage after the coarse one. The thing to understand before you buy one
Every electric sharpener works by grinding. It does not realign a rolled edge the way a honing rod does — it removes metal to create a fresh apex, and it does so faster and less selectively than a stone. On a $30 stamped knife that is completely fine and arguably ideal: you will get a working edge in ninety seconds, forever. On a $180 forged German knife it is acceptable if you use it sparingly and hone between sharpenings. On a hard Japanese knife ground at 15 degrees, a fixed 20-degree machine is actively destructive — it grinds away the thin, keen geometry you paid for and replaces it with a thicker Western edge. Diamond or sapphirite: the abrasive decides the ceiling
Diamond is harder than every carbide in every kitchen knife steel, so it cuts modern high-alloy stainless cleanly and keeps cutting as it wears. Sapphirite and ceramic abrasives are softer, cut more slowly on hard steel, and can glaze over. On a soft stamped knife you will barely notice; on a 60+ HRC Japanese blade or a modern powder steel the difference is obvious. If the machine will ever see a hard knife, pay for diamond — the same logic that makes diamond stones the fast option on a bench.
Fixed angle is the feature and the trap
The reason these machines work for beginners is that the guides hold the angle so you cannot. The reason they wreck good knives is exactly the same: the guides hold theirangle, not your knife's. Run a 15-degree Japanese gyuto through a 20-degree machine and it grinds the shoulders of your bevel back until the edge is a 20-degree edge, permanently and without asking. There is no setting to prevent it and no way to undo it short of a full reprofile on a stone. Match the machine to the knives, or buy an adjustable one.
How much steel are you actually losing?
More than a stone and much more than a rod, though the internet exaggerates it. A stone removes what is needed to reach a fresh apex; a motorized wheel removes that plus whatever the extra revolutions take while you finish the pass. The practical consequences are cumulative rather than dramatic: a knife sharpened electrically every few weeks for a decade will visibly lose blade height, and a full bolster will start to protrude at the heel. What never goes in an electric sharpener
Serrated knives, unless the machine has a stage explicitly designed for them — otherwise the wheels flatten the teeth into a jagged straight edge and the knife is finished. Single-bevel Japanese knives, which need one face ground and the other only deburred. Ceramic blades, which will shatter. Scissors and shears. Technique still matters, slightly
Even a guided machine can be used badly. Pull at a steady, moderate pace — dragging slowly heats the edge and dwelling in one spot creates a hollow. Use equal passes on each side or you will grind the apex off-center. Start in the coarse stage only if the knife is genuinely dull; if it merely needs refreshing, the fine stage alone is enough and removes far less steel. And clean the wheels occasionally, because packed swarf is what turns a sharp machine into a slow one.

If a listing will not tell you whether it is 15 or 20 degrees per side, it is because the number is not a selling point, and you cannot match it to your knives.
