Single Bevel vs Double Bevel Knives
One side ground or both. It sounds like a detail; it changes how the blade tracks through food, how you sharpen it, and whether a left-handed cook can use it at all.

Almost every knife you have ever used is double bevel: ground on both sides so the edge sits on the blade's centerline, usually symmetrically. Traditional Japanese knives — yanagiba, usuba, deba — are often single bevel: ground on one face only, with the other face flat or slightly hollowed. That single change affects how the blade steers through food, how thin a slice it can take, how you sharpen it, and crucially whether it works in your left hand or your right.

Which should you buy?
Double bevel, unless you already know exactly why you want otherwise. Single-bevel knives are specialists built around specific traditional techniques — slicing sashimi off a block with a yanagiba, katsuramuki peeling with an usuba — and in untrained hands they mostly produce wedge-shaped cuts and frustration. Every knife in our roundups is double bevel for this reason. A single bevel is a worthwhile third or fourth knife for someone who does that specific work, and a poor first one for anybody.
Why a single bevel steers
A symmetrical edge splits food evenly and travels straight down. An asymmetric edge pushes material away on the ground side only, so the blade drifts toward the flat side as it descends. Skilled users exploit this — it is what lets a yanagiba take a long, unbroken slice that falls cleanly away without dragging. Everyone else discovers it as slices that come out wedge-shaped and a blade that will not go where they aim it. It is not a defect; it is the geometry doing what it is designed to do.
The sharpening difference is bigger than it sounds
A double bevel is sharpened by alternating sides on a stone until a burr forms and then removing it — the process in how to sharpen kitchen knives. A single bevel is sharpened almost entirely on the ground face, with the flat back merely deburred flat against the stone. That back is not truly flat — traditional blades have a slight concavity called urasuki, with a narrow flat rim around it, and grinding through that rim ruins the knife permanently. It is genuinely unforgiving work and one of the main reasons single bevels stay in professional hands.
Handedness is not negotiable
A right-handed single bevel used left-handed steers the wrong way and is close to unusable for its intended purpose. Left-handed versions are made, but they are special-order items at a premium and with far less choice. Double-bevel knives are ambidextrous by default, although some Japanese double bevels are ground asymmetrically — a 70/30 or 60/40 split rather than 50/50 — which is a mild version of the same effect and is worth checking before you buy if you are left-handed.
What about asymmetric double bevels?
Several Japanese makers grind a double bevel unevenly on purpose: more steel removed from the right face than the left, so the knife gets a little of the single bevel's clean release while remaining usable in either hand and sharpenable by ordinary means. If you are sharpening one, keep the ratio rather than grinding it back to symmetrical — match your stone work to the angles that are already there, and use the angle guide to hold them.
