Full tang vs partial tang
The tang is the part of the blade hidden inside the handle. It matters for balance and durability — and rather less than the marketing that put the phrase on every box.

The tang is the portion of the blade steel that extends back into the handle. A full tang runs the entire length and width of the handle, with the handle scales attached to either side — you can see a strip of steel sandwiched between them along the top and bottom edges. A partial tang stops short, or narrows to a thin rod, and is glued or molded into the handle instead.
"Full tang" has become a shorthand for quality, printed on packaging the way "high-carbon" is. It is a real construction property with real consequences — and it is also the most over-weighted spec in kitchen cutlery, because some of the best knives in the world do not have one.

What a full tang actually buys you
Balance.This is the honest main benefit. Steel through the whole handle moves the balance point back toward your hand, which most cooks find more controllable in a pinch grip — especially on a heavy forged blade. It is the reason a full-tang German knife feels "planted" and a light stamped knife feels blade-forward.
Durability under lateral stress. If you twist a blade — prying apart a joint, levering a squash — the tang is what resists. A rat-tail tang glued into a wooden handle is the weakest arrangement and the one that occasionally fails. A full tang essentially never does.
Repairability. Riveted scales can be replaced. A molded handle cannot, and a cracked one usually ends the knife.
Why it matters less than the packaging implies
Almost nothing a kitchen knife does applies meaningful lateral stress. Chopping, push-cutting and slicing load the blade along its spine, which the handle attachment barely notices. The failures that make full tang sound essential — a handle snapping off mid-cut — come from prying, from batoning, and from a specific bad construction (a thin rat-tail glued into wood), not from partial tangs as a class.
The clearest evidence is what serious knives actually use. Victorinox's Fibrox Pro, arguably the most-recommended chef's knife in the world and a fixture of commercial kitchens, uses a full-width tang encapsulated in a molded handle rather than riveted scales — and nobody complains about its durability. Traditional Japanese knives, including extremely expensive ones, use a hidden tang driven into a separate wa-handle, precisely so the handle can be replaced when it wears out. Neither arrangement is a compromise; both are designed for what a kitchen knife actually experiences.
How to check the tang on a knife you are considering
Look at the top and bottom edges of the handle. If you can see a continuous line of steel running between the scales from bolster to butt, it is a riveted full tang. If the handle is a single molded piece, you cannot see the tang and have to rely on the specification — most reputable makers state it. A visible seam that stops part-way along the handle indicates a partial tang.
Weight distribution is the other tell. Balance a knife on one finger under the bolster: a full-tang forged knife balances near that point, while a partial-tang knife tips forward. Neither is wrong; it tells you what kind of knife you are holding.
Where tang fits among the things worth caring about
Ranked honestly for a kitchen knife: steel alloy and hardness first, blade thinness and grind second, handle comfort and grip security third, tang construction a distant fourth. Buying a worse steel because the packaging said "full tang" is a bad trade, and it is a trade the phrase was put on the packaging to encourage. When you should insist on a full tang
Three cases. If you want a heavy forged Western knife — a full tang is what makes the balance work, and every quality forged knife has one anyway. If the knife will be used for heavy or careless work, including by other people in a shared kitchen. And if you want a knife you can rehandle in twenty years, which riveted scales allow and a molded handle does not.
When you can happily ignore it
If you are buying a light stamped knife from a maker like Victorinox or Mercer, the encapsulated full-width tang is proven in commercial kitchens and you should choose on grip instead. If you are buying a traditional Japanese knife with a wa-handle, the hidden tang is the correct design and a replaceable handle is a feature. In both cases, worry about the steel and the handle shape.
The one construction to avoid
A thin rat-tail tang glued into a hollow or wooden handle, on a cheap knife, with no maker behind it. That is the arrangement that genuinely fails, and it is concentrated at the very bottom of the market where nothing else about the knife is good either. The tang is a symptom there, not the disease.
