Stamped vs Forged Knives
The industry's favorite quality signal is mostly a manufacturing difference, not a performance one. What forging actually changes, and where the money genuinely goes.

"Forged" is the single most over-weighted word in knife marketing. A forged blade is shaped from a heated billet of steel under pressure; a stamped blade is cut from rolled sheet stock and then ground, heat-treated and finished. Forging lets a maker put mass where they want it — a thick spine, a bolster, a heavy heel — and it costs more to do. What it does not do, on modern steel with modern heat treatment, is make the edge meaningfully sharper or the steel meaningfully better.

Which should you buy?
Buy stamped if you want the most cutting performance per dollar, if you prep for long stretches and want a light knife, or if this is a first good knife. Buy forgedif you specifically want heft — some cooks genuinely cut better with a heavier blade that falls through an onion under its own weight — if you want a bolster for the finger protection and the heel-balanced feel, or if the object itself matters to you. That last reason is legitimate. A knife you enjoy picking up is a knife you will use and keep sharp, and that is worth more than a spec sheet.
What forging genuinely changes
Three things, all of them geometry rather than metallurgy. First, mass distribution: a forged blade can carry a thick spine tapering to a thin edge, and a bolster that puts the balance point at your pinch grip. Second, the bolster itself, which stops your fingers sliding onto the edge and adds a substantial, solid feel. Third, spine thickness at the heel, which is what lets a forged knife take a knock without deforming. If you have ever picked up a $200 German knife and thought "this feels like a serious object", you were feeling forging — that reaction is real, it is just not the same thing as cutting better.
What it does not change
Edge sharpness is set by the grind angle, the steel and the heat treatment, none of which require forging. Edge retention is set by hardness and carbide structure, which comes from the alloy and the heat treatment. The old claim that forging "aligns the grain structure" for a stronger blade dates from an era of inconsistent steel; modern rolled stock is homogeneous and precisely specified, which is why a stamped Victorinox and a forged Wusthof both use very similar X50CrMoV15-class steel at similar hardness. The steel does not know how it was shaped.
The full bolster problem
A full bolster runs all the way down to the heel of the blade. It feels reassuring and it creates a real long-term problem: it blocks the heel from touching a stone or a sharpener, so as the rest of the edge is sharpened back over the years, an un-sharpened lump of steel is left protruding at the heel. Half bolsters avoid this entirely, which is why several German makers moved to them. Where the marketing gets slippery
"Precision forged" and "fully forged" are meaningful. "Forged from a single piece of steel" can describe either process. A visible bolster does not prove forging — some stamped knives have a bolster-shaped handle collar molded on. And a forged knife in mediocre steel at a soft hardness is a worse knife than a stamped one in good steel, which is exactly the trap in cheap forged block sets. Judge the steel, the hardness, the grind and the weight; treat the word "forged" as a description of the factory, not a grade.

Everyone in this category says they tested twenty knives in a professional kitchen. We have not hands-on tested any of these, and we say so. What we did instead: compiled the published specifications — steel type and hardness (HRC), edge angle, blade geometry, weight and build — applied established sharpening standards, ran the value math (spec quality ÷ live price), and scored each product against a published rubric. The scores are judgments from documented research — not measurements we took, because we do not have a test lab and we will not pretend we do.
