Chef knife anatomy, explained
Every part named, what it does, and — more usefully — which parts genuinely change how a knife performs and which are just vocabulary.

Product listings assume you know what a bolster is, why a full tang is mentioned, and what "distal taper" means. Most of that vocabulary describes real, useful things — and a few terms exist mainly to fill a bullet list. This page names every part of a chef's knife, says what it does, and flags which ones should actually influence what you buy.

The blade

The handle and the join

The parts that genuinely change how a knife cuts
Edge angle.The single biggest factor. Roughly 20 degrees per side on a German knife, roughly 15 on a Japanese one. Keener cuts better and chips more easily — see knife sharpening angles.
Spine thickness and distal taper.A blade that is thick at the heel and thins toward the tip feels balanced and cuts cleanly. A blade that stays thick all the way along wedges in dense vegetables no matter how sharp the edge is — sharpness cannot fix geometry.
Belly curvature.How much the edge curves decides whether the knife wants to rock or push-cut. This is the actual difference between a chef's knife and a santoku, more than the name or the country of origin.
Handle shape and material. A grip that stays secure when wet and greasy matters more for safety than any spec on the blade. This is where a $30 Victorinox genuinely beats far more expensive knives for many people.
The full bolster problem
A bolster that runs all the way down to the heel blocks that part of the edge from ever touching a stone or a sharpener. Sharpen the rest of the blade over a few years and the heel is left standing proud as an unsharpened lump, which then needs grinding back by a professional. Half bolsters and bolster-free designs avoid this entirely. It is one of the few anatomy details that should change what you buy — stamped vs forged covers where bolsters come from.
Full tang: less important than the marketing suggests
A full tang runs the entire length and width of the handle, visible as a metal strip sandwiched between the scales. It is genuinely stronger and it shifts balance rearward, which many people prefer. But a well-made partial tang is not a weak knife, and plenty of excellent stamped knives — including ones used all day in professional kitchens — have molded handles with no visible tang at all. Treat "full tang" as one input, not a pass/fail test.
What Granton dimples actually do
The scallops ground into the face of some blades create small air pockets so thin, wet slices release instead of clinging. They work on potato, cucumber and cured meat, do nothing on herbs or dry ingredients, and have no effect whatsoever on sharpness. Useful, frequently oversold. They also slightly complicate stone sharpening at the very heel, but not enough to avoid them.
Reading a spec sheet after this
A listing that says "X50CrMoV15, 58 HRC, 15° per side, full tang, half bolster, distal taper, 8 oz" is now fully legible: German-class stainless at a fairly hard temper, ground keener than traditional German, strong handle join, no heel-sharpening problem, well-distributed weight, moderately heavy. A listing that says "professional-grade high-carbon steel, ultra-sharp, ergonomic" has told you nothing measurable at all — and that difference is usually the most reliable quality signal on the page. We did not lab-test these knives
Everyone in this category says they tested twenty knives in a professional kitchen. We have not hands-on tested any of these, and we say so. What we did instead: compiled the published specifications — steel type and hardness (HRC), edge angle, blade geometry, weight and build — applied established sharpening standards, ran the value math (spec quality ÷ live price), and scored each product against a published rubric. The scores are judgments from documented research — not measurements we took, because we do not have a test lab and we will not pretend we do.
