Chef's Knife vs Bread Knife
A straight edge presses; a serrated edge saws. That one difference decides bread, tomatoes, cake and crackling — and it is not something sharpness can overcome.

People assume a sharp enough chef's knife should handle bread. It does not, and the reason is mechanical rather than a question of sharpness. A straight edge cuts by pressing a thin wedge through material. A crusty loaf resists that press with a hard shell over a soft, compressible interior, so the blade skates on the crust, then suddenly breaks through and crushes the crumb underneath. A serrated edge does not press — each tooth concentrates force on a tiny point, pierces the crust, and the gullets between the teeth saw the rest apart with almost no downward pressure.

Which should you buy?
You want both, and they cost wildly different amounts. The chef's knife is the investment. The bread knifeis the one place in the kitchen where a $16 knife is genuinely competitive with a $150 one, because a serrated edge cannot be maintained at home — you are buying a consumable with a long life, not an heirloom. If you already have a chef's knife and are deciding whether a bread knife is worth the drawer space: it is, and it is the cheapest meaningful upgrade most kitchens can make.
Wavy, pointed, or double serrated?
Scalloped or wavy serrations have rounded gullets and relatively blunt tips. They are the most common pattern, they saw cleanly, and they are gentler on soft interiors. Pointed serrations bite harder into a tough crust and can tear a soft crumb. Double-serrated edges — small teeth cut into the larger ones — grip aggressively and are the usual choice on premium German bread knives. In practice the pattern matters less than length and blade rigidity: a knife that crosses your loaf in one stroke without flexing will outperform a fancier edge that needs three passes.
Length, and the mistake people make
Buy a bread knife longer than the widest thing you cut, which for a round sourdough or a watermelon means 9 inches at an absolute minimum and 10 inches comfortably. The common mistake is buying an 8-inch bread knife to match the chef's knife: it looks tidy in a block and then saws instead of slicing, which is exactly the compression problem you bought a serrated edge to avoid. Blade thickness matters too — a whippy thin blade wanders through a tall loaf.
The jobs nobody tells you a bread knife is best at
Ripe tomatoes, where a slick skin defeats a straight edge unless it is freshly sharpened. Citrus, for the same reason. Layer cake and delicate pastry, where sawing beats pressing. Melon and squash skin. Crackling and the crust on a roast. Even a soft baguette that would compress under a chef's knife. If your chef's knife has gone dull and you are waiting to sharpen it, the bread knife is the tool that quietly covers for it — though the honest fix is to sharpen the chef's knife.
Why you should not try to sharpen it
Every serration is its own tiny curved bevel, ground on one side of the blade. Restoring them properly means a tapered rod worked into each gullet, one at a time, at the right angle — slow, easy to get wrong, and capable of destroying the edge geometry in a few careless strokes.
