How to hold a chef knife
The single biggest improvement most home cooks can make costs nothing: move your hand forward onto the blade. Here is why that works, and what your other hand should be doing.

Most people hold a chef's knife the way they hold a hammer: fist around the handle, index finger wrapped underneath, hand entirely behind the bolster. It feels natural and it is the reason a lot of home cooks find chopping tiring, imprecise and slightly frightening. The fix takes about a minute to learn and permanently changes how a knife behaves in your hand.
The pinch grip
Move your hand forward so that your thumb and the side of your bent index finger pinch the blade itself, just ahead of the handle, on either side of the steel near the heel. Your remaining three fingers wrap the handle loosely. Your index finger does not sit on top of the spine — that is a different, weaker grip that people often adopt by mistake.
Three things happen immediately. Control improves, because you are gripping the blade rather than steering it from a distance — the same reason you hold a pen near the nib. Fatigue drops, because the knife's balance point is now inside your grip rather than out ahead of it, so your wrist stops fighting the blade's weight. The knife becomes safer, because a controlled blade goes where you intend.
It feels wrong for the first few minutes and then feels obvious. The guiding hand: the claw
Your other hand does more work than the knife hand and gets far less attention. Curl your fingertips under so the first knuckles face the blade and the fingertips are tucked behind them. Rest the flat of the knife against those knuckles. Your thumb stays behind your fingers, never out in front.
The knuckles become a physical guide the blade slides along, which does two jobs at once: it sets the thickness of every slice consistently, and it makes it geometrically difficult to cut your fingertips, because the tips are behind the knuckles that are stopping the blade. Slice thickness is controlled by how far you retreat the guiding hand between cuts, not by aiming the knife.
The single most common mistake here is flattening the fingers out to hold something steady. That puts fingertips exactly where the edge is going. If something is too small to claw, it is too small to cut on a board — halve it first so it has a flat face, and let the flat face hold it still.
Two motions, and which knife suits which
The rock chop.Keep the tip in contact with the board and lift the heel, rocking the blade forward and down through the food. It suits a curved Western profile — the belly of a German chef's knife is designed for exactly this — and it is fast on herbs and soft vegetables.
The push cut (or draw cut). Lift the whole blade and move it forward and down through the food, or draw it back and down. It suits flatter Japanese profiles, santokus and nakiris, and it produces a cleaner cut on anything you want in neat slices, because the edge passes through rather than crushing down.
Matching the motion to the blade matters. Rocking a flat-profiled santoku is frustrating because the edge has no curve to roll on; push-cutting a heavily curved German knife wastes the belly it was built around. Board setup, which is part of the grip
A board that slides is a safety problem no grip can fix. Put a damp cloth or a piece of shelf liner underneath it. Set the board far enough from the counter edge that your forearm is not braced against nothing, and high enough that your shoulder is relaxed — a board on a too-high counter forces you to lift your elbow, which costs control. If you cut a lot, board height is worth more attention than most people give it.
Why a dull knife is the dangerous one
A sharp knife bites where you put it. A dull one skids off a tomato skin or an onion's curve and travels somewhere you did not choose — usually toward the hand holding the food. Practicing it properly
Buy a bag of carrots and cut the whole bag. Not because carrots are important, but because they are cheap, uniform, firm enough to require real technique, and there are enough of them that your hand stops thinking about it. Aim for consistency of thickness rather than speed — speed is a by-product of consistency and arrives on its own.
Start with the pinch grip on its own for a few minutes, then add the claw, then add the motion. Trying to change all three at once is how people give up and go back to the fist.
When the grip is not the problem
If a proper pinch grip is genuinely uncomfortable after a fair trial, look at the knife rather than your hand. A thick, square spine digs into the index finger. A full bolster can force your hand back off the blade. A handle that is too thick or too thin for your hand fatigues it regardless of technique. Length matters too. A knife that is too long for your board or your hand is harder to control no matter how you hold it, and 6 or 7 inches is a perfectly serious choice for a smaller cook rather than a compromise.
The three habits worth building
Never catch a falling knife. Step back and let it hit the floor. This is the single most repeated piece of kitchen advice because it is the single most common serious injury.
Never leave a knife in a sink of water. Someone reaches in. Wash it, dry it, put it away — which also happens to be what keeps the edge alive.
Cut on a stable surface with a flat face down. Anything round gets halved first so it cannot roll. Most cuts happen to food that moved.
